Mandarin Rice Bake

From Grandma Rosie’s family collection

Illustrated interpretation of Mandarin Rice Bake
Illustrated interpretation from the family cookbook.

Let’s make it

  1. Preheat the oven to 350°F. Put rice in a deep 2-quart casserole. Add the boiling water and salt; set aside.
  2. Brown the ground beef in a skillet over medium heat, breaking it up, until cooked through. Drain excess fat. Stir in celery, onion, green pepper and pimento, then add to the rice.
  3. Stir in the soup and soy sauce and mix well.
  4. Cover tightly and bake for about 1 hour 15 minutes, until rice is tender and the center reaches 165°F. If rice is still firm and dry, add ¼ cup hot water, cover and bake 10–15 minutes longer.
