A few familiar kitchen words

A little help in the kitchen.

A glossary from the cookbook, plus a few useful notes about this family collection.

Icebox

An insulated cabinet kept cold with a block of ice, before electric refrigerators became commonplace.

Scald

Heat milk until steaming and tiny bubbles appear at the edge; do not let it boil vigorously.

Simmer

Cook gently with small bubbles rising occasionally, below a rolling boil.

Fold

Use a spatula to lift and turn ingredients together gently, preserving air in a light mixture.

Cut in

Work cold fat into flour with a pastry blender or two knives until small crumbs form.

Double boiler

A heatproof upper pan or bowl set over gently simmering water for indirect, gentle heat.

Broil

Cook with strong direct heat from above. Watch closely because food can brown quickly.

Soft-ball stage

A candy-making stage at which a drop of syrup in cold water forms a soft, pliable ball. Use the recipe’s thermometer temperature.
