Applesauce Banana Bread

From Grandma Rosie’s family collection

Illustrated interpretation of Applesauce Banana Bread
Illustrated interpretation from the family cookbook.

Let’s make it

  1. Preheat the oven to 350°F. Stir the sugar into the bananas and let stand for 15 minutes.
  2. Add the applesauce and eggs; beat well. Beat in the baking soda, baking powder, salt and vanilla.
  3. Gently stir in the flour just until incorporated, then fold in the optional nuts.
  4. Grease a 9 × 5-inch loaf pan. Fill no more than two-thirds full; bake extra batter in greased muffin cups. Bake the loaf at 350°F for about 55–75 minutes, until a toothpick comes out clean; check muffins at 18–22 minutes.
  5. If the top browns early, tent loosely with foil. Cool in the pan for 10 minutes, then turn out onto a rack to cool fully.
