Sugared Walnuts

About 1½ pounds

Illustrated interpretation of Sugared Walnuts
Illustrated interpretation from the family cookbook.

Let’s make it

  1. Line a baking sheet with parchment. Combine sugar, honey and water in a heavy saucepan. Heat gently, stirring until sugar dissolves.
  2. Bring to a boil and cook without stirring until a candy thermometer reads 242°F, or a small drop in cold water forms a soft ball.
  3. Remove from heat. Stir in walnuts and vanilla; continue stirring until the syrup becomes creamy and thick and coats the nuts.
  4. Spread on the prepared sheet. Separate clusters with two forks while warm, then cool completely. Break apart and store airtight.
