Lazy Daisy Cake

9 servings (estimated)

Illustrated interpretation of Lazy Daisy Cake
Illustrated interpretation from the family cookbook.

Let’s make it

  1. Heat oven to 350°F. Grease a 9-inch square metal pan suitable for broiling. Warm milk and butter in a saucepan until butter melts and milk steams.
  2. Beat eggs and sugar until pale and slightly thickened. Sift flour, baking powder and salt together; stir into the eggs with vanilla. Gradually stir in hot milk.
  3. Pour into the pan. Bake 20–30 minutes, until the center springs back and a tester comes out clean.
  4. Mix topping ingredients and spread over the warm cake. Broil about 6 inches below the heat for 2–4 minutes, until bubbly and golden. Watch continuously and remove before the coconut burns. Cool slightly before cutting.
